Five greens cooked one way. My daughter had jokingly named this dish. Three quarters of our diet need to be green leafy veggies. Beet tops, dandelion, mixed with spinach, kale and those limp lettuce greens in your fridge. You simply sauté together in olive oil, maybe a bit of butter. The trick is to cut up some garlic and flavor the olive oil with that...I also splash in a few drips of balsamic vinegar to sweeten the pan. Greens not only provide us with vitamins and minerals, they create a good habitat for beneficial bacteria in our gut.
