
Mighty Meatloaf
Meatloaf is an American comfort food and we ask; how do we rework it into being a brain healthy meal? We think we have succeeded by substituting beef with grass fed lamb (organic grass- fed beef or turkey could also be used) and using oats instead of bread as a filling. We have also taken advantage of the intense flavor to add some super spices to support brain health. I think my mother who made a great version of this would approve and appreciate the color due to adding turmeric. Try it out and make some of your own modifications and let us know what you think. This recipe serves 4 or two very hungry people.
1 pound of ground lamb or organic grass- fed beef or turkey
1 cup of organic oatmeal
1 medium onion chopped fine
1 red bell pepper chopped chunky, ¼ inch pieces
3 eggs preferably organic pasture raised
1 cup mushrooms chopped chunky
1 tablespoon turmeric
½ tablespoon cinnamon
1 tablespoon ground sage
½ tablespoon marjoram
1 teaspoon coriander
½ teaspoon ground black pepper
Salt to taste
Catsup for the top.
