Your plate should be two thirds green leafy vegetables. Unfortunately, we don’t have a big green leafy salad for breakfast tradition…. or do we? Green Eggs is an omelet of green leafy vegetables peppers and onions, all stirred together with spices and herbs for brain health. Avocado and mushrooms are good additions. Chop up half a bunch of parsley and or cilantro Chop fine an onion Chop bell pepper in small chunks Chop a cup of spinach or salad greens Add spices and herbs Add two to four eggs Heat on medium/low Stir or gently flip over Serve.
